The rack of ribs went down before I even finished saying grace was almost done. I had the platter balanced on the card table I had been using as a prep surface since before Ruben was born, right next to the tongs and a half-empty pan of glaze, and the front leg buckled the second the weight settled on it. Nine years of folding that table in and out of my garage caught up with it in about half a second, right there in front of Kara, Beto and both grandkids, on a Sunday when Hollis and two of his boys had wandered over too. That is the whole reason a Royal Gourmet rolling prep cart is sitting on my patio right now, and how it got there is worth telling straight through.

Nobody said anything for a second. Tessa just looked at the ribs on the concrete like she could not believe what she was seeing, and Ruben started laughing before he caught himself and realized his grandmother was not laughing at all. Marisol went inside for a broom without a word, which in thirty six years of marriage I have learned means she is being polite about how annoyed she is. Hollis, to his credit, just said what everybody was thinking. He told me that table had been dying for two summers and I had known it too, I had just kept propping the bad leg with a folded paper plate and hoping it would hold one more Sunday.

A hand hanging a grocery trash bag on the built-in wire holder of a stainless top rolling prep cart beside a smoking grill

I have built plenty of things around this house over the years, and my first instinct was to go buy lumber and build a proper prep table myself. But it was the middle of July, I had six more people coming for the Fourth in a week and a half, and I did not have a free Saturday to spend in the garage measuring boards. So that same night, after everyone had gone home and I had hosed the concrete off, I sat at the kitchen table with my laptop and started looking for something I could just order and put together fast. That is where I ran into the Royal Gourmet PC3404S, a rolling cart with an actual stainless top and a trash bag holder built into the side, and I ordered it before I let myself talk myself out of it.

It showed up four days later in a box heavier than I expected, and I put it together on the patio with a cup of coffee and the Phillips head screwdriver I use for everything. Marisol came out halfway through, looked at the stainless top leaning against the fence, and said it was the first grill accessory I had bought in years that she actually approved of on sight. I will admit I felt a little foolish that it took a rack of ribs on the ground to get me here, but I also could not stop thinking about how much simpler the whole setup would have been that Sunday if this cart had already been standing between my kettle and my offset.

I did not need a better table. I needed to stop pretending a folded paper plate was a repair.

A man and his wife standing together on a patio beside a stainless top rolling prep cart parked between two grills

The first real test came two weeks later, another Sunday, another full house. I rolled the Royal Gourmet cart out from the fence line where I had been keeping it, parked it between the kettle and the offset the way I had pictured that night at the kitchen table, and just started working off it like I had been doing this for years instead of days. Raw chicken went down on one end while I pulled finished ribs off the offset and let them rest under foil on the other. Nothing wobbled. Nothing needed a paper plate under any leg. I noticed it mostly by how little I noticed it, which is its own kind of compliment.

The trash bag holder turned out to matter more than I expected going in. I used to set a grocery bag on the ground next to whichever grill I was working and kick it over at least once a cook, usually right when my hands were full of something hot. Having it hanging off the side of the cart instead, at hip height where I actually reach for it, has quietly fixed a problem I had stopped noticing I had, one of a handful of small things this cart fixed that I did not expect going in. Tessa has also claimed the wire shelf underneath as the official spot for her water bottle, and I have given up correcting her on it.

I will not pretend it has been perfect. Living a few blocks off the water the way we do, the salt air found its way into the bolts and the caster axles inside the first year, and I have had to stay ahead of that with a cover and some light oil more than I originally planned on. That is just the cost of keeping anything metal outside near the Gulf, cart or otherwise, and I would rather you hear that from me than find it out yourself six months in. It has not once made me regret buying it. It has just meant I actually maintain the thing, the same way I maintain the kettle and the offset.

I wrote up the full year of use, rust and all, in a longer piece if you want the complete accounting, and I also laid out how it stacks up against building your own prep table if you are the type who would rather cut lumber yourself. Both are linked here if you want to go deeper than one Sunday's story.

What I'd Tell You If We Were Sitting at My Kitchen Table

If you asked me straight, over coffee, whether you need one of these, I would tell you it depends on how many people show up at your place on a regular Sunday and how tired you are of balancing plates on whatever surface is closest to the grill. I am not going to tell you a cart changed my life. It did not. It just meant I stopped setting hot pans on furniture I did not trust, and I stopped watching the ground every time I carried something out. For a man who cooks for a crowd most weeks of the year, that is worth more than it sounds like sitting here saying it out loud.
